HISTORY & HERITAGE: Sweet corn is a North American original, developed from field corn varieties by Indigenous peoples and then selected for higher sugar content by European-American breeders in the 19th century. Today's sweet varieties owe their remarkable sweetness to specific genetic mutations that slow the conversion of sugars to starch — meaning the race between field and table is one every home gardener can win.
CULINARY TIPS: The cardinal rule of sweet corn: cook it the day you pick it. Bring the water to a boil before you go to the garden. Exceptional simply boiled 4-5 minutes and buttered. Also wonderful grilled in the husk, sliced off the cob for corn salads and salsas, or charred and blended into a summer corn soup.
GROWING GUIDE: Direct sow after last frost when soil temperature reaches 65°F, 1" deep, 8-10" apart in rows 24-30" apart. Plant in blocks of at least 4 rows for adequate wind pollination. Full sun essential. Keep consistently watered through silking and ear formation. Days to maturity: 75-80 days.
