Japanese Hulless Popcorn
This wonderful old dwarf variety offers one of the most delightful double-harvests in the vegetable garden. Let ears fully mature and dry for hull-free popcorn that pops tender without getting stuck in your teeth. Or harvest the ears young at just 2-3 inches for the tender, sweet baby corn you know from Asian cooking. One plant, two completely different crops.
HISTORY & HERITAGE: A genuinely old Japanese variety, preserved through generations of careful seed-saving. Baby corn was prized in Asian cuisines long before it appeared in Western markets, harvested young and eaten whole — cob and all. The hulless trait means the pericarp is so thin it essentially disappears when popped, making for a far more tender popcorn experience.
CULINARY TIPS: For baby corn: harvest when ears are 2-3" and silks are just emerging. Wonderful raw in salads, stir-fried with ginger and soy, or grilled with a miso glaze. For popcorn: allow ears to dry completely on the plant, then shell and pop in a heavy pan with coconut oil. The hull-free result is noticeably lighter and more tender than standard popcorn.
GROWING GUIDE: Direct sow into warm soil (at least 65°F) after last frost, 1" deep, 8-10" apart in rows 24-30" apart. Plant in blocks rather than single rows for good wind pollination. Full sun essential. Days to maturity: 85-100 days.
